General Tea Blend for Hong Kong Milk Tea

The general tea blend for Hong Kong milk tea is a combination of three Ceylon black tea. Ceylon black tea has three major categories, according to the thickness of tea leaves:

1. Broken Orange Pekoe, or BOP, i.e. thick tea

 2. Broken Orange Pekoe Fannings, or BOPF, i.e. medium thick tea

 

3. Dust, i.e. thin tea

 

Tea leaves are the soul of milk tea, as they determine the color, aroma and taste of milk tea. Thick tea is richer in aroma, while medium thick tea has a darker color, and thin tea is rich in both taste and color. Tea masters mix different proportions of thick, medium thick and thin teas based on personal preference and experience to create their own tea recipe.
